Cap'n Crunch's Crunch Berries® Cookies

Ingredients

  • 1¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • 1/8 teaspoon salt
  • ½ cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon orange extract (optional)
  • 2 cups Cap'n Crunch's Crunch Berries® Cereal

Preparation

  1. Preheat oven to 350°F. Combine flour, baking soda and salt in small bowl; set aside.
  2. Beat butter and sugar in large mixing bowl until creamy. Add egg, vanilla and orange extract; beat well.
  3. Gradually beat in flour mixture on low speed. Stir in cereal, crushing some pieces with back of spoon.
  4. Drop by rounded tablespoon onto ungreased baking sheet. Bake 11-13 minutes or just until light golden brown. Cool for 1-2 minutes on baking sheet before removing to cooling rack.
  5. When cool, store in an airtight container.

Yield: about 30 cookies

Variation: Omit orange extract and substitute Cap'n Crunch's Peanut Butter Crunch® Cereal for Cap'n Crunch's Crunch Berries® Cereal.

In a hurry? Simply stir 2 cups of Cap'n Crunch's Crunch Berries® Cereal into a roll (16.5 ounces) of prepared refrigerated sugar cookie dough that has been brought to room temperature. Bake as directed above. Or try these fun combinations:

1 package (16.5 ounces) Chocolate Chip Cookie Dough and 2 cups regular Cap'n Crunch® Cereal or Cap'n Crunch's Peanut Butter Crunch® Cereal
