Cap'n Crunch's Crunch Berries® Cookies
Ingredients
- 1¼ cups all-purpose flour
- ½ teaspoon baking soda
- 1/8 teaspoon salt
- ½ cup butter, softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- ½ teaspoon orange extract (optional)
- 2 cups Cap'n Crunch's Crunch Berries® Cereal
Preparation
- Preheat oven to 350°F. Combine flour, baking soda and salt in small bowl; set aside.
- Beat butter and sugar in large mixing bowl until creamy. Add egg, vanilla and orange extract; beat well.
- Gradually beat in flour mixture on low speed. Stir in cereal, crushing some pieces with back of spoon.
- Drop by rounded tablespoon onto ungreased baking sheet. Bake 11-13 minutes or just until light golden brown. Cool for 1-2 minutes on baking sheet before removing to cooling rack.
- When cool, store in an airtight container.
Yield: about 30 cookies
Variation: Omit orange extract and substitute Cap'n Crunch's Peanut Butter Crunch® Cereal for Cap'n Crunch's Crunch Berries® Cereal.
