Cap'n Crunch® Thai-Style Chicken Tenders
Ingredients
- Chicken Fingers
- 2 cups Cap'n Crunch's Peanut Butter Crunch® Cereal
- 2 tablespoons chopped fresh cilantro
- ¼ cup flour
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 2 eggs, lightly beaten
- 2 tablespoons sriracha Asian chili sauce
- 1 pound chicken breast tenders or boneless chicken breast cut into 1" strips
- Thai sweet chili sauce or sweet and sour sauce for dipping
Preparation
- Preheat oven to 450°F. Crush cereal in a resealable food storage bag using a rolling pin or mallet to make fine crumbs. Toss with cilantro and place in a shallow dish.
- Combine flour, salt and pepper in a separate shallow dish.
- Whisk together eggs and sriracha in a shallow bowl.
- Working with 1 piece at a time, dredge chicken in flour mixture, then dip in egg mixture and coat with cereal crumbs, pressing lightly to adhere.
- When all of tenders have been coated, lightly spray both sides of chicken with non-stick cooking spray.
- Place prepared tenders on a baking sheet. Bake 5 minutes, turn each tender and continue baking 4-5 minutes or until lightly browned and centers are 165°F.
- Serve with Thai sweet chili sauce or sweet and sour sauce for dipping if desired.
Yield: 4 servings
Cook's Tip: Use a fork to dredge the tenders in the flour, egg and crumbs to keep your fingers clean.
